Procedure for Harvesting Birch Sap

Birch sap is not only a delicious and refreshing drink but also a true treasure trove of beneficial substances. However, to enjoy its benefits and preserve the health of the trees, it is important to follow a few simple harvesting rules.

The harvesting of tree sap begins after the sap flow starts, which is determined by pricking the tree trunk with an awl, from undamaged trees with a trunk diameter of 20 centimeters or more at a height of 1.3 meters from the ground level.

Holes for harvesting tree sap (hereinafter referred to as tapping holes) are drilled with an auger. The maximum number of tapping holes is determined by the tree's diameter at a height of 35–50 centimeters from the ground level (for a diameter of 20–26 centimeters – one hole; for a diameter of 27–34 centimeters – two holes; for a diameter of 35–40 centimeters – three holes; for a diameter exceeding 40 centimeters – four holes).

To drain tree sap into sap collectors, a spout made of stainless metal is inserted into the tapping hole, which should be no more than 1 centimeter in diameter and no more than 3 centimeters deep, excluding bark thickness.

The process of collecting tree sap into sap collectors is carried out using methods that ensure minimal loss of tree sap and damage to trees.

After the sap harvesting is complete, to protect the wood and prevent tree diseases, the spouts are removed, and the tapping holes are sealed with a wooden plug and covered with garden wax, garden putty, a mixture of clay with lime, or resin containing 10–15 percent charcoal.

In the next sap harvesting season, new tapping holes should be located at a distance of at least 20 centimeters from the old holes.

Harvesting tree sap is prohibited: in populated areas; in places of mass recreation, in riparian zones of water bodies, within the right-of-way of railways and highways, and some other territories (detailed information can be obtained from forestries or inspections).

Violation of harvesting rules, established deadlines, or the use of prohibited means or methods of collection entails a fine of up to 20 basic units in accordance with Article 16.19 of the Code of Administrative Offenses of the Republic of Belarus.
